Instead of ./configure, try:

./configure --help | grep 'gdk-pixbuf'

to see if you need to implicitly point the configure script to wherever
the gdk-pixbuf RPM installed itself.

May be something like:

./configure --with-gdk-pixbuf=/usr/local/lib/gdk-pixbuf
