I think I've mentioned it before, but we are using OpenWebmail and absolutely love it. The install was rather painless under FreeBSD, YMMV under Linux. It's Perl, and there are some modules that will need to be installed. I think it also requires Perl 5.8. I've heard good things about Squirrel Mail, but haven't used it myself.
