BackupPC rules.

It's packaged in Debian; not sure about Gentoo, but I'd imagine it's 
there.

The advantages of BackupPC really come when backing up multiple machines 
(any identical files will automatically be hardlinked), but it should work 
just fine for what you want to do, too. It supports incremental and such 
out of the box.
